Recipe: Madeleines and nuggets

Recipe for homemade madeleines and nuggets, the softness of a madeleine and the crunch of chocolate chips, a pleasure to be enjoyed without moderation. Recipe ingredients

  • Madeleines and nuggets recipe for: 40 Madeleines approximately
  • ½ lemon
  • ¼ lime
  • 4 eggs
  • 250g of flour
  • 275 g butter
  • 3 g liquid vanilla extract
  • 200 g of caster sugar
  • 200 gr of chocolate chips.
  • 75 g milk
  • 10 g of yeast

Instructions

  1. Prepare the madeleine dough the day before.
  2. Sift the flour and baking powder and mix.
  3. Beat the eggs with the sugar.
  4. Pull the lemon zest.
  5. Add the zest, then the milk and vanilla.
  6. Gently pour the flour into the yeast.
  7. Melt the butter
  8. Pour in the hot but not boiling butter.
  9. Mix until obtaining a homogeneous dough.
  10. Reserve in the refrigerator overnight, so that the dough rests.
  11. Heat the oven to 230 °.
  12. Brush the madeleine molds with melted butter.
  13. Singer the mold with the flour (the action of adding the flour to the sides to butter).
  14. Tap the mold to extract the excess flour.
  15. Fill a pocket with the Saint Honoré piping tip (If you do not master the pocket, a small spoon will do).
  16. Pour in each location about 25 to 30 g of preparation.
  17. Add the nuggets on the madeleines, just before cooking.
  18. Bake for 5 to 6 minutes, then lower the heat to 180 °.
  19. Bake for another 5 minutes (be careful to stay in front of the oven the first time to determine the cooking time).
  20. Return the oven to 230 ° for the second cooking.
  21. Unmold the madeleines and start again, until the dough is used up.
