  • 3 bay leaves
  • ½ grapefruit
  • ½ lemon
  • 25g butter

Instructions

  1. Rinse the sea bream prepared by the fishmonger.
  2. Generously oil a baking dish.
  3. Place the sea bream on the oil.
  4. Salt the inside of each sea bream.
  5. Place a bay leaf in each sea bream.
  6. Cut the ½ grapefruit in four and divide in the dish.
  7. Slice the ½ lemon then cut the slices in half and place in the dish.
  8. Slice the butter into six parts and distribute over the fish.
  9. Season generously with salt and pepper.
  10. Bake in a hot oven at 200 ° for 10 minutes.
  11. Salt out of the oven with fleur de sel.
