Instructions

  1. Degrease the saddle of rabbit.
  2. Separate the two kidneys.
  3. Turn the saddle open to the maximum.
  4. Place the sun-dried tomatoes flat inside the saddle.
  5. Peel then finely cut the garlic cloves, reserve a clove for the tomatoes.
  6. Scatter the garlic directly over the tomatoes.
  7. Place a small branch of sage on the tomatoes.
  8. Close the rabbit’s stomach by squeezing it a little, then turn it over.
  9. Place 3 to 4 sage leaves on the back.
  10. Tie the saddle to tarnish it during cooking.
  11. Brush generously with tomato oil all over the meat.
  12. Salt and pepper.
  13. Cook high on your barbecue, with the bell closed, between 30 and 45 minutes
  14. Rinse the eggplant and tomatoes.
  15. Cut the eggplant into thin slices.
  16. Oil a baking sheet.
  17. Place the vegetables on the baking sheet and cook on the barbecue.
