Recipe ingredients

  • 750 g chicken liver
  • 450 g of fresh breast
  • 70 g of dry trumpets
  • 2 large shallots
  • ½ bunch of parsley
  • 2 cloves garlic
  • 2 eggs
  • 10 cl of Madeira
  • 12 g of salt
  • 3 g of pepper
  • ½ g of ginger
  • ½ g cinnamon
  • ½ g ground nutmeg
  • 1 tablespoon of olive oil
  • 1 strainer

Instructions

  1. Dip the trumpets in a volume of lukewarm water.
  2. Soak the strainer in cold water.
  3. Peel the shallots, then finely chop them.
  4. Peel the garlic and then squeeze it.
  5. Slice the pork into large cubes.
  6. Trim the chicken livers.
  7. Chop alternately the meats.
  8. Add the pressed garlic.
  9. Sprinkle with the spices, salt and pepper.
  10. Wring out the trumpets.
  11. Heat a pan with the oil.
  12. Sear the shallots in the hot oil.
  13. Add the trumpets to the hot pan.
  14. Let them reject their waters, then let cool.
  15. Chop the trumpets in the chopper.
  16. Add the eggs and trumpets to the meat.
  17. Mix the preparation.
  18. Line the terrine with the strainer.
  19. Pack the meat to the bottom of the terrine.
  20. Bake in a hot oven at 160 ° for 1h30 with the lid on.
  21. Remove the lid of the terrine after an hour and finish cooking.
