Recipe ingredients

  • Chocolate Charlotte recipe for 12 people:

  • 325 chocolate
  • 125 g butter
  • 100g sugar
  • 9 egg whites
  • 9 egg yolks
  • 100 caster sugar
  • White chocolate mousse
  • 180 g white chocolate
  • 35 cl of fluid fresh cream
  • 50 g icing sugar
  • 10 cl of whole milk
  • 2 gelatin sheets

Instructions

  1. Place the spoon cookies upright in the pan to miss.
  2. Place the rest of the cookies with a spoon in the bottom of the charlotte, avoiding holes as much as possible.
  3. Make the dark chocolate mousse:
  4. Crush the chocolate before opening the plates, on the edge of a work surface.
  5. Heat a saucepan in a double boiler with the chocolate, until a smooth ointment is obtained.
  6. Incorporate the soft butter cut into small cubes.
  7. Add the egg yolks off the heat and mix gently with a spatula.
  8. Whip the egg whites until stiff, incorporating the caster sugar during assembly.
  9. Pour the chocolate mixture over the stiff eggs.
  10. Mix gently without breaking the egg whites.
  11. Store in the refrigerator for at least two hours.
  12. Let set a little, then pour gently into the mold without moving the cookies.
  13. Make the white chocolate mousse:
  14. Grate the white chocolate wafer into fine shavings.
  15. Soak the gelatin sheets in lukewarm water.
  16. Heat 10 cl of milk in a saucepan, from the first broth turn off the heat.
  17. Stir in the gelatin.
  18. Pour the chocolate into pieces, cover and let the chocolate relax in the cream.
  19. Make a whipped cream with the rest of the cream, then add the icing sugar.
  20. Gently add the melted chocolate to the whipped cream.
  21. Let set a little, then pour gently into the mold without moving the cookies.
  22. Place in the refrigerator overnight.
