  • 37 cl of white wine
  • 1 bouquet garni
  • 2 cloves
  • 2 large veal bones
  • 1 bacon rind
  • 1 bone marrow.
  • 1 liter of water

Instructions

  1. Rinse the vegetables.
  2. Peel the carrots, then cut them into 1 cm slices.
  3. Peel the turnip, then cut it into 1 cm rounds.
  4. Peel the onion, then prick it with the cloves.
  5. Prepare the leeks, then cut them into 1 cm rounds.
  6. Rinse the calf’s foot with plenty of water.
  7. Place the vegetables in a large Dutch oven.
  8. Place the calf’s foot on the vegetables.
  9. Pour the port over the vegetables.
  10. Pour the white wine.
  11. Pour the water, the vegetables should be covered.
  12. Gently simmer the vegetable broth for 2:30 hours.
  13. Filter the preparation using a colander.
  14. Pass the juice through a Chinese.
  15. Reduce the broth to the desired amount of jelly.
  16. Let stand overnight in the refrigerator.
  17. Remove the layer of fat on top.
  18. Your jelly is ready.
  19. I pour the jelly in a plastic tray to a height of 1 small cm.
  20. Refrigerate the jelly on the tray.
  21. Cut out your jelly with cookie cutters.
